職務内容 

シェフ業務

  • 寿司バーとホットキッチン両方の日常業務の流れを管理

  • 品質管理

  • チームマネジメント

  • コンプライアンスと安全

  • 在庫管理と原価計算

  • 業務遂行

 

条件: 

  • 日本料理の厨房での3~5年以上の経験 

  • 寿司と温調理の経験必須 

  • 魚のさばき、ご飯の炊き方、伝統的な日本料理の温調理技術(揚げ物、焼き物など)に精通 

  • 食品安全および衛生管理基準に関する深い理解
